I am not a good cook.. in fact, I don't really enjoy cooking..

 

but I need to cook for my son.. he lives alone... doesn't eat right.. anyway.. I'd like to get some help here..

 

Do any LSers have quick, easy, healthy recipes that can be 'frozen' in small portions.

I think I didn't explain it right..

 

I need recipes for meals that can be frozen.. I would cook stuff.. then put them in small containers so he can keep them in his freezers..

 

This weekend.. I've made 4 small lasagnas.. 2 small shepperd pies.. but I would like more 'variety' ...

 

Something that is not too complicated.. quick and good. ;)

Chili, lasagna (which you've done), eggplant parm, soups, stews...

 

All can be made easily in bulk, then put into individual freezer tubs.

Coq Au Vin freezes well, and is easy to prepare. You can look up a recipe, or I can give you my version. Meatloaf can be cooked, frozen, and zapped. Add a baked potato, and salad, and dinner is served. You can make it with veal, sausage, ground round, venison, ground turkey or any combination. PM me if you want my Coq Au Vin recipe.

ooh, yeah, that's a fantastic site!

 

one of my favorite slap dash meals is picadillo (ground beef and potatoes, spicy style)

 

brown a pound of hamburger meat, and as it's cooking add one medium diced onion and 2-4 medium diced taters. Season with garlic powder, stir well.

 

add salsa to taste and enough water to steam it out. Simmer over low heat about 15-20 minutes, and serve with heated corn or flour tortillas, or bread if you are in a pinch.

 

another favorite quickie is broccoli pasta: cook up a small package of pasta (spaghetti works best), drain, set aside. In large frying pan, sauté one medium diced onion in a bit of oil, then add a bag of frozen chopped broccoli (here, the amount can vary, depending on your taste for the stuff). Let that steam out, season with garlic powder and a healthy spoonful of butter. Add drained pasta, coating with oil or butter as needed to help it mix smoothly. Best part about this dish is that you can chop up bite-sized pieces of meat and mix it in, or serve alongside your favorite meat. This reheats well.

 

a pot of pintos also can be easily frozen, and served as needed. Goes good with cornbread, flour torillas, scrambled eggs or just on their own.

Lizzie, Some great ideas here from OJB:) I'll add that making a big pot of homemade Spagetti sauce is also another good was to make an easy meal in bulk that you can freeze and use agan. As well as pot roast. Happy cooking.;)

Saute a chicken breast on both sides over low heat in a covered skillet until white on the outside. Add roughly chopped green pepper (and/or red/yellow) and onion (and a few jalapenos for those who like it HOT) and pour salsa over all. Cover and simmer until veggies are how you like 'em. Stack the veggies on top of the chicken as best you can and cover with grated cheese. Cook covered an additional few minutes to melt the cheese.

 

I had this last night. YUMMY!!!
