LucreziaBorgia Posted May 24, 2010 Share Posted May 24, 2010 (edited) I eat a lot of this, which is really good and good for you: Parsley Salad (A modified tabbouleh) Two bunches of chopped flat leaf parsley One tomato, diced One small cucumber seeded and diced (seeds are optional) One clove crushed garlic (or a couple of shakes of garlic powder) Cracked black pepper (three good shakes) 2-3 tablespoons olive oil salt to taste 2 tablespoons lemon juice 1/2 cup cooked and cooled quinoa (or bulgur wheat) 2 sprigs mint chopped (optional, some like it some don't) 2 stalks green onion Mix, let sit overnight to mix flavors **************** I eat quite a bit of tofu too, and in order to make it taste better in things I buy the extra firm cubed, and then will open it, drain it, rinse it, and then put it in a container with a brine (salty solution made with whatever seasonings you want to use). Honey/cilantr grilled salmon: Ingredients: 1) fresh salmon fillet (I've tried using frozen fillets and they don't turn out nearly as well), with skin still on. 2) 3/4 cup of honey 3) 1 small "bunch" of cilantro, finely chopped 4) mesquite chips (about a handfull or two) 5) asparagus 6) aluminum foil Instructions: 1 hr before grilling, soak the mesquite chips in water. Bring the honey to almost a simmer on the stove in a sauce pan and add the chopped cilantro. The mixture should be runny when complete. Pour mixture (while still warm) into a large baking pan and put the salmon fillet in with the skin side up so the meaty part is immersed in the honey. Put into the refer. After the fish is in the refer, light the charcoal grill. Get it good and hot (the coals should be red hot and not smoking a lot). I prefer natural wood charcoal over the manufactured Kingsford charcoal. While the grill is heating up, make a little (8" x 4") "boat" for the asparagus out of aluminum foil. Put the asparagus in the foil along with a little olive oil, sea salt, and whatever else you want to season it with. Seal the foil. Put the foil boat on the grill. After the asparagus has been on the grill for about 10 minutes, put the wet mesquite chips on the hot coals. They will start to smoke heavily. This is good. Put the salmon fillet on the grill, flesh side down first. Turn once, giving each side about 5 minutes. It depends on how hot your grill is, but it wont take very long. The fish is done when the flesh "flakes". Be sure not to overcook though. Eat the salmon. Eat the asparagus.
