I eat them as if they were french fries (meaning I eat a ton of them). I buy the organic ones, steam them for a little while, then I CHOW DOWN!!!! Let me say, it's got PLENTY of vitamins and minerals, low calories (a monster plate of them barely gets to 200 calories and I'm full for hours by the time I finish em), and HIGH FIBER!!!! This will clean you out completely (when you go to the bathroom, you'll see why). Whether you're bulking up or cutting, string beans carries a BIG PUNCH and will keep you full and HEALTHY (and pushing out a good one in the bathroom, lol). I like string beans and especially spinach .. but hate the sorting and cleaning .. Have yet to find a frozen spinach product that's any good. Also prefer cauliflower to brocoli .. I can eat many vegetables raw .. But the greatest dip is Good Seasons dry Italian Dressing mix in sour cream .. Is that breaking the healthy food barrier over here? Link to post Share on other sites

It seems to me people eat less and less vegetables (at least in the southern U.S. they do). Other than onions I have not met a vegetable I don't like. I love veggies. Veggies with fruits, some grains, and white chicken or turkey meat, along with fish, make the extremely healthy lifestyle eating. In that, you got the fiber, vitamins, minerals, and enough protein and calories to gain muscle. But never forget plenty of water with all that or else you lose plenty of it's benefits. It seems all people know it for is eggplant parmigiana, which is pretty yummy, but the eggplant is so versatile! It makes a great side dish sauteed, or an amazing sandwich with some feta, olives, perhaps some grilled onions. You can throw it in a stir-fry or curry. The trick my mom taught me for preparing an eggplant is to slice it up and soak it in salt for half an hour before rinsing and cooking. The salt sucks up the eggplant's acid (or something). I really couldn't help laughing out loud on that one I like broccoli too, but hate the stalk. So I guess I like eating the mini-tree's leaves. My most under-rated food: raw carrots - the ones you have to "peel / strip / etc". Very crisp and much more flavorful than pre-peeled baby carrots. I grew up with a vegan parent and we only ate the most strange foods, mostly smelly and not very well cooked. So as an adult I have reverted to kind of a quasi healthy childhood diet; so food can be fun! I'm all about potatoes now too, not a lot of food value all-in-all but yummy. Watermelon: A two-cup, 85-calorie serving provides 38 percent of a day's supply of vitamin C and 32 percent of vitamin A. Everyone loves watermelon! People in the south pour salt on theirs. I really love broccoli and brussle sprouts. Love broccoli and brussels sprout! <3 <3 I'm all about potatoes now too, not a lot of food value all-in-all but yummy. And yes, my favorite are the little mini potatoes. I'm on a Golden Yukon kick. They're so delicious and buttery tasting. Last night I made a soup and threw kale in it. Eggplant is the BOMB. I love it marinated in a falafel sandwich with hommus... mmm... And I love it sliced like chips and fried with tomato sauce.
