zebracolors Posted April 26, 2011 Share Posted April 26, 2011 Congratulations on your upcoming wonderful event:) Seems like a good way to save on some money, making your own wedding cake. But if you do it yourself, you will need to budget out enough to make for as many guests as there will be I would guess. I don't typically make fruitcakes, as I don't really care for them. Wish I could get you my late grandfather's recipe, his were always well liked by friends. However I can suggest a recipe from a site that I have used on a few occasions, and might have made a chocolate cake from it at some point. Here are two recipes from Epicurious.com for a classic style of fruitcake and chocolate cake; "Mrs Mackinnons Christmas Fruitcake" Chocolate Cake-caramel/choc frosting And if that one does not look like something you would like, it has many other recipes indexed of variations. And I am sure there are many good chocolate cake recipes as well. You just have to follow the recipe but keep in mind most recipies there are for 2-4 and maybe 6 people so you need to take that into account as well. Hope this helps. Costco has sheet cakes that would be fitting for an inexpensive wedding cake if you are stuck. Otherwise I know a few recipes. My favorite chocolate cake to work with is this one http://www.epicurious.com/recipes/food/views/Double-Chocolate-Layer-Cake-101275 but I usually use a different frosting on the outside...the filling works well though. But you can us whatever filling you like. You can even find ready made ones that are very good or use a pudding base to make a really tasty one.
