Looking at the photos, her face really slimmed down and doesn't look as soft as before. Anyway pretty much superficial, much like guys wanting to tell gf that they are getting fat. If she has been overweight in the past, it is possible that she could be on an unhealthful track of taking it too far. I don't know. You'd know better. In any case, I can see it being problematic to get a women to put on some weight on purpose unless she's been prone to being skinny all her life and feels bad because she always been faulted for being too thin. Tell her you found her attractive before, and that if she's doing this for you, she really doesn't have to, though it's a kind gesture. If she's doing it for her own health, well, it is her body and her choice. However, having been down the eating disorder road, watch her closely, especially if she still insists she needs to slim down. Good food couldn't hurt, and if you're a great cook... If so, I might say something like "Life is too short to deny yourself the pleasure of good food. Enjoy!" and encourage her without focusing on the weight/appearance aspect. I liked it when that happened to me because I finally had cheekbones. If she doesn't have good bone structure, she might look gaunt.
