Sauté zucchini in olive oil with onion, carrots, bok choy, yellow squash and sesame seeds. Drizzle teriyaki over it for more flavor. Marinade a salmon steak in teriyaki and grill or bake and pair it with stir sauté. This is my go to meal when I need lots of veggies. G 1 Link to post Share on other sites

Try them mixed with your favorite salsa, spaghetti sauce, or basil pesto recipe. Try making tacos and loading up with cilantro (don even bother with lettuce, just use cilantro), tomato, and fresh onion. Also, if you need recipes integrating vegetables, some if hem are really heavy, but the Moosewood cookbook is pretty good. Link to post Share on other sites
gaius Posted January 14, 2014 Share Posted January 14, 2014 I still have some cans of spinach with Popeye on them from the 90's that I pop open occasionally if there's nothing else around. Just heat it up with some butter or mix it in with an egg or two. Most people that hate vegetables have at least one that they hate a lot less than the rest. Mine are spinach and pineapple.
