Need veggies meals recommendations

Traditional hummus is low fat.

 

I make hummus all the time:

 

* Can of garbanzos, drained (save liquid)

* 2-3 cloves garlic, minced

* 1 teaspoon cumin powder

* 1 tablespoon tahini (peanut butter works too)

* Juice of 1 lemon

 

Whirl in blender or food processor until very smooth, adding the bean liquid as needed to get a good blend going and make a smooth dip texture.

 

Can be used as a dip for carrots, bell peppers, cucumbers, radishes, crackers, baked pita triangles etc. Can also be eaten with a spoon!

 

I use the same recipe but I add cilantro when I have. Yum I love hummus. Have you ever tried different flavor? Like artichoke or olives?

black bean salad.

 

2 cans black beans

1 can cor

2 cans diced tomatoes.

1 small onion

1-2 scallions.

1/4 feta

hot sauce to taste

salt to taste

fresh cilantro.

1/3 cu olive oil

1/4 cu red wine vinegar.

 

drain and rinse the beans, tomatoes and corn. Chop the onions and scallions mix in a bowl with the feta, hot sauce chopped cilantro and salt.

 

Make a vinaigrette by whisking the olive oil and vinegar together put over the other ingredients stir and serve.

 

I personally use less vinaigrette. Use just enough to coat salad and save the rest.

Roasting pretty much any vegetable makes it crunchy and snack like. Asparagus, brussel sprouts, cauliflower, sweet potatoes, etc. Cut to the appropriate size ( I slice sweet potatoes, halve brussel sprouts, cauliflower bite size pieces) toss with just enough olive oil to coat, salt, pepper, garlic powder. I also use cajun on some veggies, use whatever you like, curry powder, cumin etc.

 

Put on a baking sheet at 400, toss or flip once and depending on the veg, in 10-20 mins you will have a flavorful, textured treat with only the olive oil adding any fat at all. Quick and easy too !

Chicken breast and veg stir fry. Huge mistake doing veggies only.

 

Yeah I know

But I am a vegetarian so that not gonna happen

 

 

You know chicken used to be my favorite meal

 

It's kinda surprising that

one day I decided to stop eating meat

 

and I did it so easily

 

yet I can't give up on chocolate and all the sweets that I love so much

the problem is my oven does not work on gas

so it use a lot of electricity if I used it

 

Too expensive for me..

Vegan tacos: Juliann red and orange pepers, diced onions, avocado, and some quino, you can also add whatever veggies you like, add some dill, lemon, salt a peper, and wrap all that up in boston lettus or romain lettus. soo good.

That happened to me too, I use to love chicken, and one day, I just gave it up, and now looking at chicken makes me feel queezy. Although I cannot give up sweets, and cheese, even though I still don't have a lot of that stuff, but I keep them in my diet. its odd eh? that we just woke up and disliked meat..

if you have a mandolin, you can do a lot of different things with veggies, you can make pasta quick out of veggies. I made a home made Portobello mushroom salsa today:

 

 

Cubed Portobello mushrooms, tomatoes, and zucchini. Grade some garlic, put in a pan with olive oil, a dash of salt and pepper. it was sooo tasty!
