There are some people I'm aware of that are quite passionate (maybe overly so) about their hobbies.

There's one I know of that likes to hike a lot, which takes up most of her time, another is an avid boater (sailboat). Again takes up most of their time.

Can this usually interfere with dating schedules? Would one be so apt to give up a weekend of hiking/sailing to date?

Its about compromise.

I have a very full and busy life. Not just hobbies but family, friends etc...

If I want to date someone I make the time. I juggle things around and fit it in. The same way I would if a friend had a crisis and needed me.

When I was working exceptionally long hours (a 12 hr day was a quiet one) and competing with the horse etc I still managed to date.

Ironically the only one to have ever complained about me not spending enough time with them is the one that didn't want to spend time with me! I wasn't even doing that much with my animals and had cut back on the amount of time I was spending doing the things I love and seeing the people I love... Big mistake on my part... very big mistake...
