who will take an eggplant parm?

we'd eat it but it's dipped in egg before I breaded it and has mozzarella cheese sprinkled on top and I'm vegan and so is my daughter and my son who lives home won't try it because he likes chicken parm

Eggplant is one of fewer than five foods I dislike, but I'd still try it! :)

Thanks! We called the nursing home/long term care/rehab that my daughter did her clinicals at but too many of the people there are on a special diet.

It's pretty hard to donate home cooked / perishable foods.

 

I hate having food go to waste - but few will take it (too risky).

 

Here? I live busy downtown with a big homeless population. It's not unusual for me to bring some cooked food / leftovers out and offer them to whoever wants it.

I see you live near the Jersey Shore. I used to live in Manahawkin just a year ago! I live in Northern NJ now.

I'm not driving down the shore just for an eggplant parm; too snowy up here.

 

I have a real Q though. Not trying to be snarky but isn't the dish you described with the egg & the cheese vegetarian not vegan? I thought eggs & cheese were prohibited for true vegan. I thought vegan meant plant based only, no animal products of any kind including eggs, milk & cheese, even ice cream.

when eggplant is made the right way it is delicious. I used to hate it too when I was young. I thought it was slimy and gross but now I love it.

That's why we can't eat it! Because I made it for people who would eat it but plans got cancelled due to snow :(

 

I made my own with goat-free and cow-free Parmesan cheese made from cashews and dipped in almond milk and breaded with vegan breadcrumbs.

 

It's delicious :)

that sounds heavenly amay.....pass me some....i have had to change my diet drastically trying to get rid of diabetes 2 just found out i have it..found a doc who cares and now im getting help with my weight loss with no judgment....

I'm sorry deb to hear about diabetes. That sucks :(

 

I hope they get your sugar under control. I think you'd need a double shot of insulin to tolerate my marinara though....I make it a little on the sweet side to counter all that acid

 

But it's yum!

Oh by the way, I got rid of the eggplant parm. My daughter took a snapchat of it and her friend Cody asked for it which I don't mind giving it to him since that kid can fix practically anything if we need him to :love:

mmm sugar.....:0)....

im actually craving salt not sugar im on oral meds for my diabetes.....im getting mad headaches though....could be the change of diet or the meds.....splitting headaches....deb

I'm also in risk of type 2, it's all about sugar (which includes carbs) and protein intake. If you lose weight and eat right you WILL get rid of it, promise. My tip is to eat something every 3 hours, mainly protein-based. Cut significantly on carbs and sugar. Your doc won't tell you that but that's the main point. Also, take metformin to help.

 

It's specially hard for me as I'm pescatarian and don't eat meat, I prefer carby stuff which is basically what increases A1C. Good luck!
